My 3rd and 4th graders are making a 6 slide ppt called My Little Book of Thanks which will be printed on one page and cut/stapled into a little book. We will be practicing formatting, clipart, and google image copy/paste as we think about some of the little things we are thankful for such as hot chocolate with whipped cream on a cold day. 1st and 2nd graders are making a Thanksgiving kerpoof scene with text and captions

Another thing we have done is have the students in second grade write down what they think the directions are for cooking a turkey or making dressing, pumpkin pie... The students do the writing/typing in Microsoft Publisher and add the appropriate pictures and then it is compiled and sent home for each class. Many parents have said they keep it as a 2nd grade keepsake.
I too like the cooking how tos! Fun idea! I tried the thankfulfor thing... Looks like a place for folks to sign up to share what they are thankful for, but I don't see much purpose in it... and now I can't see how to close the account. :(
I also make a T-giving podcast with my PK (3/4 year olds) students. They hand draw their picture and I scan it in or take a picture of them holding it. I add that to their sweet little voices on GB and have a great keepsake for their parents (and them).
My 1st graders make a T-giving ppt that we are going to upload into their blog. I hope to have parents/grandparents/etc comment on it.
I don't have my lesson plan book in front of me, but will come back to post more.
